I melt some butter in the pan and saute some finely chopped onion in it. Then I add the broccoli and just enough water to cook it. Then I make a white sauce of butter, flour and milk. After it thickens, I add it to the soup and at the very end, I stir in some cheese. You can use chicken broth in place of the water, which I do if I have it.
