Baking mamas, your opinions please!

i am baking 4 dozen carrot cake cupcakes for a party tomorrow. How would the cream cheese icing hold up if I ice them today? Should they be refrigerated?
Also, have any of you ever piped cream cheese frosting from a pastry bag? Did you have to thin it out?

  • I would def. refrigetate if you ice the day before.

    For icing, I like a large tip #1M (also called tip #2110.)

    You can use it to pipe a swirl, starting at the outside of the cupcake and working your way inward.

  • the cupcakes do not need refrigerated. The frosting does. When you make the frosting, make sure all ingredients are ROOM TEMP, it will pipe from a bag just fine without any thinning if it is room temp. You can frost them today, and refrigerate them. If you do not, the fat in the frosting will separate, and it'll slide off.

  • I think the icing would be fine as long as its not hot in your house. Putting them in the fridge would make the icing more solid. I've never used a pastry bag; a twisted ziploc bag with the corner snipped off works just as well!

  • I always ice them right before serving. They look nicer that way, but they will hold up if you ice them today & put them in the fridge. The only time you need to refrigerate cupcakes (without icing) is if you do not plan on eating them for a few days. If you're using them tomorrow, just put them in an air tight container, so they don't dry out any.

    cream cheese Icing always needs to be refrigerated, but let it warm up for 1/2 an hour so that it will be a bit softer before applying to the cupcake.
