  • Casseroles are always good and quick to prepare. They always take about 30-40 minutes in the oven though. If you are interested in some recipes message me and ill get you some. GL

  • Pasta with tomato cream sauce. Put 3-4 cups pasta (penne) on to boil. When half way done start this sauce.....saute 1t of minced garlic in a tablespoon or so of olive oil. Add in this order - 1 can diced tomatoes drained, 2t tomato paste (from a tube), 3-4 sundried tomatoes cut up, 1/2 cup cream. After it is hot combine with pasta.

  • I meant to say I also like the sauce without the cream for a quick tomato sauce.

1 pound firm tofu, drained and cubed (optional)
1 cup (2-inch) sliced green onions
    1 cup shredded carrot
Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (this can also be done in the microwave; use a tempered glass bowl, like pyrex, cook for 20 seconds, stir, repeat until smooth). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss g
