Why aren't noodles soggy from a can?

Why is it if the noodles sit in a pot of water too long they get super soggy and gross...but they can be in a can forever and still hold their shape and not be soggy?

  • Because there are additives in them that keep them from getting overly soggy.

  • It's the ungodly amount of salt/sodium they add. If you added a cup of salt to 3 cups of boiling water your noodles might stay nice too (j/k).
