Anyone want a great chicken recipe???

I asked on here yesturday about if Ritz crackers as part of a breading on chicken would be good or not...and it turned out to be REALLY good! SO if you need a new recipe (or you may already have it) heres this one. Please feel free to share any of your GREAT recipes with me too!! Always looking for new ideas in the kitchen! Thankyou.

CHICKEN PARMESEAN BUNDLES

4 oz pkg of cream cheese,softened ( I went ahead and used 8 oz..the whole pkg,lol)
1 pkg frozen chopped spinach,thawed, well drained
1 1/4 cups shredded motzarella,divided (I didnt measure so I'm sure I used more)
6 Tbsp. Grated parmesean cheese,divided ( again, I really didnt measure this)
6 small bnlss,skinless chicken breast halves ( I used chicken tender strip size and pounded out..seemed to be the perfect size for me)
1 egg
10 ritz crackers ( yep..I used more than that, lol)
1 1/2 cups spaghetti sauce, heated ( I just tossed in a whole jar in a pot and used for my pasta noodles I made on the side as well)

Preheat Oven to 375.
Mix CREAM CHEESE,SPINACH,1 CUP OF THE MOZZARELLA CHEESE & 3 TBSP. of the PARM CHEESE until well blended...spread evenly over the chicken pieces.
Starting at the shortest end of the chicken, roll tightly.Secure with wooden toothpicks (try to get the ends closed up as much as you can too because it will melt out a little as it bakes.) Set aside.
Beat egg in shallow bowl.Mix remaining 3 Tbsp Parm chs and the cracker crumbs in a seperate bowl.Dip chicken bundles in the egg, then roll in the crumb mixture until evenely coated.
Place SEAMS side DOWN in baking dish that has been SPRAYED WITH COOKING SPRAY.
Bake 30 minutes or until chicken is cooked through ( mine took 40 mins).Remove from oven..let sit about 5 minutes to set a little.Remove toothpicks.Serve with a little spaghetti sauce and motzarella cheese on top.
DELICIOUS. ( on the side I made some pasta noodles for the remaining red sauce and a steamed vegetable meadley.

  • That sounds very good. I would probably sub the cream cheese w/ the low fat version and i think there is a low fat ritz cracker too. Thanks for the recipe!
