How can i make fluffy muffins?

i have always wondered if anyone knew how they made the muffins so big and fluffy like from the store or on t.v. i have been playing around with things but they either end up burnt or regular size. So anyone have any tips?

  • Get a jumbo muffin tin. Use a little extra baking powder. Don't over-mix the batter. Don't overfill the cups either or they'll just run over.

  • You have to overfill them to get the tops to rise big and fluffy.

  • Sounds like you may need to put more batter in your muffin cups. I fill mine 2/3 full.

  • And get an oven thermometer to make sure your oven is baking at the right temp - having it off can really affect them, mine is 25 degrees off so I have to set it at a different temp so it bakes at the right temp
