What are ya makin for dinner tonight??

Hmm, fiance gets off work in about 2 hours....what should I make (thats relatively easy) for dinner tonight??

    i'm going to have a salad....for the 2nd night in a row. i'm addicted to this ranch dressing =[ (hidden valley dip, but made into a dressing)

    stuffed crust pizza sounds good, or anything on the grill! or even spaghetti......i'm hungry, can u tell?

  • Lucky me my dad came over (I live in the same apartment complex as 2 of my sisters & my parents) with a large plate of ham. One of my sisters baked a ham & gave the leftovers to my dad to give out the rest of us. I grabbed enough for SO & I to enjoy for dinner. I got potatos on the stove & if he'd like I can cook up some veggies. He is sleeping BTW everyones sleep schedule is out of wack with him working 6 days a week & our daughter being sick =( so it'll be ready for him when/if he wakes up! Tomorrow we head to my aunts house for ham dinner too hahahahaha he'll be sick of ham come monday!

  • Blueberry waffles for dinner
    • 1 1/4 cup whole wheat flour
    • 1/3 cup cornmeal
    • 1 tablespoon ground flax seed
    • 1 tablespoon sugar
    • 2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 2 eggs, separated
    • 1/4 cup vegetable oil or canola oil
    • 1 1/2 cup milk
    • 1 cup fresh blueberries, washed
    • Maple syrup
    1. Whisk flour, cornmeal, flax seed, sugar, baking powder, and salt in bowl. In separate bowl, whisk egg yolks, oil, and milk. Add wet ingredients to dry ingredients and whisk until smooth. Beat egg white with electric mixer until stiff peaks form. Fold whites into batter. Fold in blueberries.
    2. Heat waffle iron to medium-high heat. Lightly spray top & bottom with oil. Drop batter by 1/4 cupfuls. Bake until golden brown and cooked through, checking in 2 minutes. Transfer to plates. Repeat with remaining batter.
    3. Top with heated maple syrup and more blueberries
