I'm sooo bored with our menu........

We always rotate the same things: spagetti, stir fry, chicken, some version of tacos, lasagna, and a few others. Got any unusual but easy recipes or meal suggestions?

  • Beef Stroganough is easy and yummy

Just combine cooked egg noodles, mushrooms, carrots, low fat cream of mushroom, and sour cream.

    Grilled Chicken Salad

Just grill some chicken and toss it with your favorite green salad

    Mexican Chili

Combine 1 lb hamburger meat browned, 1 can rotel, 1 can diced tomatoes, 1 can kidney beans, 1 can pinto beans,1 can ranch style beans,1 package taco seasoning, and 1 package ranch dressing mix. You can make it in the Slow Cooker on low for 4 to 5 hours OR you can just throw it all in a big pot and boil it for 25 minutes.

  • is great, I agree! Making your own chicken strips is easy, fast, and tasty. We do that a lot. We've been on a soup kick lately...with the damp chilly weather that won't seem to go away. I made chicken tortilla soup last night. I think I will make potato ham tonight.

  • We did a skirt steak (marinated for a couple hours then broiled), yellow rice, black beans and fried sweet plantains the other was to DIE for!! and a great change of pace.
Grilled cheese and soups are good and easy.
Homemade subs or chef salads are tasty too!

  • You can try just adding a new spice or ingredient to the things you already eat. Like Tacos, add curry instead of taco seasoning, or use ground chick peas, use plain yogurt instead of sour cream. For lasagna you can used shredded pork and bbq sauce. Layer sharp cheddar cheese, the pork and BBQ sauce. Serve with tangy cole slaw. Spaghetti is a good one to switch up. We have a sausage and pepper spaghetti or a Philly cheese steak spaghetti. You can really put any of your favorite ingredients in spaghetti. ie. Cheeseburger spaghetti is good too.

  • We do homemade pizza rolls.

Buy large crescent rolls. Unroll them. Fill them with whatever pizza toppings you like. (not to much because you need to reroll them) Once you roll them cook as directed on the roll package. I prepare any meats ahead of time so they are cooked. My daughter and her friend love them. Also how about breakfast for dinner.

Hamburgers - Throw hamburger meat into a bowl. Add breadcrumbs, worchershire sauce (SP) a little beer, garlic and onion powders, salt and pepper. Mix it all up real good and then make into hamburgers.

Chicken noodle casserole, One package of chicken, small package of egg noodles, 8 ounces of sour cream, 1 can cream of chicken, and cheese. Boil chicken and noodles. (separately). Then mix all together and cook at 350 for about 25-30 minutes.
