  • Mix 1 tablespoon of mayo and 1 tablespoon of parm cheese together. Spread thin layer on chicken breasts. Bake at 350 for 20 mins, remove and top mayo spread with italian breadcrumbs. Bake for another 10-20 mins (or until chicken is cooked through). Sounds kinda weird but its yummy!

  • One of my favorites: Mix some cracker crumbs and some poultry seasoning and a little thyme. Beat up an egg. Dip the chicken in the egg and then in the crumbs. Place in a greased baking dish, and spread a can of undiluted cream of chicken soup over the top. Bake at 350 until done(how long depends on the size of your chicken breasts).

  • We marinate boneless skinless chicken breast in a mixture of 2 tbsp olive oil, 1/4 cup balsamic vinegar, 1 tbsp italian seasoning. Grill the chicken. Slice it thin after it's cooked and toss onto a salad consisting of:

    8 cups mixed greens
    1/2 cup dried cranberries
    1/2 cup candied walnuts
    1/2 cup crumbled feta cheese

Top with a light balsamic vinagrette.

Another favorite for boneless skinless chicken breast is chicken pot pie. Cut raw chicken breast into 1" thick cubes. Sautee in a skillet with olive oil til the chicken is done. Combine the chicken with 1 cup thinly sliced carrots, 1 cup cut green beans, and 1/2 cup corn kernels. Add in 2 cans of cream of chicken or cream of mushroom soup (condensed), 1 tsp Mrs Dash original seasoning, and 1/2 tsp each of garlic powder and onion powder. Mix in a little ground black pepper. Put it all in a 2 quart baking dish and top with a refrigerated pie crust and bake at 350 til browned

  • Ranch chicken-dipped in crushed corn flakes, dry ranch, parm cheese and then baked. It's very yummy. Pm me if you would like the recipe.

  • Simmer the chicken breasts for about 25 minutes (or until done) using a carton of chicken broth, about a half cup of chopped parsley, and a cup or two of chopped mushrooms. Season with black pepper and salt to taste. The broth makes the chicken very tender.

  • Grill or saute with your favorite seasonings, if possible marinade first in either lemon w/olive oil, or white wine, olive oil, and herbs, etc.
