What am I to do with all these mushrooms?

Last week, I bought 2 containers of mushrooms because they were on sale and I had a coupon that was about to expire. I've only used about 1/3 of one container on salads but can't think what to do with the rest. My husband and kids hate them but I love them. What can I do?

  • I love sauteed mushrooms! They find their way into omelets, pasta dishes, onto steaks, mushroom swiss patty melts, all sorts of things in my house. I can go through a lb of button mushrooms in a week all by myself. My kids don't care for them either, so I just make sure they're only on my plate.

  • cook them down with olive oil and garlic and then freeze in an ice cube tray. When frozen, pop out and put in a freezer bag. Then you can use how ever many cubes you need for sauces, eggs, or whatever, they last a long time this way
