HEALTHY ramen noodles?

So I figure the first step in any recipe for healthy ramen noodles is "throw away the flavor packet" lol.

Anyone have a good recipe for sauce/flavoring for ramen noodles that is healthy?

  • low sodium soy sauce, sesame oil, a crushed garlic & ginger, green onions, a little broth (can be chicken, beef...whatever)

    Lightly pan fry the garlic & ginger, add broth, soy sauce, sesame oil & boil for a minute. Add noddles & whatever other veggies you would like in it. Top with green onions.

    I ate this when i was pregnant a lot, haven't made it in a while...but it's really good!

  • We make our own broth from onions, garlic, dehydrated mushrooms, and what ever veggies are around. Then cook the noodles. We also often add tofu or seitan.

  • try the web site for dif ideas. i throw the pak away, use tuna in water, garlic lil mayo, or your fav veg and tuna...... chop mush room and mild onions season it. and ripe olives.

  • my friend puts butter and parmesan cheese on hers maybe like a garlic and butter sauce too?...i know butter isnt very healthy but thats all ive heard of.

  • Get the noodles from an Asian market (or make them yourself) - you can get them in larger quantities and don't have to deal with the packets or all the extra packaging. From there, you can use them any way you'd use any pasta. If you want to do your own ramen, there are a bunch of traditional recipes out there for the real thing, which isn't really much like the stuff in the packet. Make dashi with mushrooms and add whatever veggies you want to it.

  • It's not healthy still but I only use a quarter of the packet and a touch of fat free ranch dressing. I also cook frozen peas and carrots in the water with the noodles.
