  • This is very easy and very tasty.
    Chicken Supreme

    4 chicken breasts
    1 small box Minute rice
1 can cream of celery soup
1 can cream of mushroom soup
    generous sprinkle dried onion soup
    1 1/4 can water

put rice in bottom of casserole, pour heated celery soup and 1 ½ cup water over. Place chicken on top and sprinkle with onion soup. Heat mushroom soup and remaining water and pour over. Cover with 2 thicknesses of foil and bake 350° 2 hours.

  • Yes, always wash your chicken. Probably oil the pan a bit too (with PAM, olive oil, or butter).

  • Another easy recipe (and practically a full meal):
    Tater-tot casserole
    -Preheat oven to 350 degrees
-Mix a can of green beans, a can of cream of mushroom soup and a pound of ground hamburger with some chopped onions in it in a roasting tray or baking dish
-Add about 10 good "shakes" worcestershire sauce and pepper generously
-Put a layer of sliced velveeta over the top of the mixture
-Lightly brown frozen tater-tots in the meantime (you want to put those in the oven before you even start making the mixture)
-Layer lightly browned tots on top of velveeta
-Put it all in the oven and bake for 20 minutes! Voila! Serve with cottage cheese. This is a good one for kids and babies, too. Has everything in it.

  • My favorite stand by recipe:

    Baked Breaded Chicken Breast:

(not sure how many you are cooking for so this is for two and you can double if you like)

Melt a pad of butter with a tblsp of olive oil in a small pot on a med low heat
add about three or four chopped garlic cloves (you can use a garlic press if you have one)
let simmer about 2 minutes --you want garlic soft, but not brown
    Remove from heat
mix in about 2 cups italian style bread crumbs you can add seasoning as you like -- basil, onion powder, oregano
    Mix until crumbs are moist
    Crack one egg and beat
dip chicken in the egg, let excess drip off
dip in bread crumbs and make sure covered
repeat with as many breasts as you have
    cook at 350 or 375 for about 30 - 35 minutes
serve with steamed veggies and rice!

It all gets easier as you do it more. Don't get discouraged by kitchen disasters...that'
