  • "Boiled Dinner"

Chunk up Potatoes, Onions, Carrots, Celery, Cabbage. Toss in a pot with bay leaves, garlic, salt, pepper, basil, thyme, sage. Toss in a chink of meat if you like (any will do, beef, chicken, turkey, pork, lamb, venison, etc.). Simmer for a couple hours. Use the stock to make gravy if desired.

We're having this for supper. It is a favorite around here. Takes 10 minutes to prep, can be cooked in a crock pot, and tastes better the next day.

  • One Pot Pasta

Cook 1 lb of pasta (whatever shape you like), drain, rinse, set aside.

In the same pot, add 3T olive oil, crushed garlic (I use a whole head, but you will probably only want 2-3 cloves), one chopped onion, sautee over med until soft (do not burn garlic).

Add 1 28 oz can diced tomatoes, whatever meat/veggies you like, cook over med/high until liquid is reduced.

Add oregano, basil, marjoram, thyme, or italian seasoning, salt & pepper, garlic powder to taste.

Toss pasta in sauce, serve immediately with grated cheese on top.

  • Fried Rice

    Cook rice. Set aside.

Scramble a few eggs, chunk and cook meat (if desired). Set aside.

Use a bag of frozen stir fry mix, sear, remove from pan.

Add olive oil, rice, garlic powder, soy sauce, pepper. Cook until you reach desired crispness. Add all ingredients back in, toss to mix.

  • In a large pot add a few cans of green beans, a few peeled and cubed potatos, 1 pkg sliced smoked sausage, 1 chopped onion, pepper to taste. Boil over med heat until potatos are done (may need to add water as it boils). This can be done in a crockpot as well. Serve with corn bread if desired.

  • If you don't have a CrockPot, get one! They make easy meals a snap. They usually come with a few recipes to get you started. I make awesome pasta sauce in it, let it cook all day, then an hour before dinner stir in the pasta and dinner is done.
