My grandmother used to make a German Potato Salad...

She did not leave the recipe to anyone that I know of. I have looked online and see lots of warm recipes, but the one she made was cold. Does anyone have any recipes for that?

  • * 4 cups cubed peeled potato
    * 4 slices bacon, diced
    * 1/2 cup chopped onion
    * 1/2 cup chopped green pepper
    * 2 eggs, beaten
    * 1/4 cup sugar
    * 1/4 cup vinegar
    * 1/4 teaspoon pepper
    * 2 hard-cooked egg, sliced

    Cook potatoes in a covered saucepan in an inch of boiling salted water until tender, about 20 minutes. Drain. In a large skillet, sauté bacon until almost crisp. Add onion and green pepper; cook 3 minutes longer. Combine beaten eggs with vinegar, sugar, and pepper; mix to blend well. Gradually add egg mixture to the bacon mixture, stirring and cooking until mixture thickens. Remove from heat and toss gently with potatoes. Spoon salad into a serving dish and garnish with sliced eggs.
    Serves 6 to 8.

  • German Potato Salad


    * 4 potatoes
    * 4 slices bacon
    * 1 tablespoon all-purpose flour
    * 2 tablespoons white sugar
    * 1/3 cup water
    * 1/4 cup white wine vinegar
    * 1/2 cup chopped green onions
    * salt and pepper to taste


    1. Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool and chop.
    2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
    3. Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
    4. Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated

  • Ingredients:

    * 12 slices bacon
    * 2 sliced hard cooked eggs
    * 6 cups hot diced cooked potatoes
    * 3 tablespoons granulated sugar
    * 1 tablespoon cornstarch
    * 1/2 teaspoon salt
    * 1/3 cup vinegar
    * 3/4 cup water
    * 2 tablespoons sliced green onions
    * chopped parsley for garnish

    Dice 6 slices of the bacon. Fry diced bacon along with the 6 whole slices in a heavy skillet. Remove whole slices to drain on paper towels; set aside.

    Combine sugar, cornstarch, salt, vinegar, and water; slowly add to diced bacon and bacon grease in the skillet, cooking and stirring constantly over medium heat until thickened. Pour over hot potatoes and eggs; add green onions and toss lightly to mix. Garnish with bacon slices and a little chopped parsley; serve hot.
    German potato salad serves 6.

  • 6 medium potatoes, peeled, cooked and sliced
    14 slices OSCAR MAYER Center Cut Bacon, cut into 1-inch pieces
    1 medium onion, chopped
    2 stalks celery, thinly sliced
    1 Tbsp. flour
    1/2 cup water
    1/2 cup cider or white vinegar
    1/3 cup sugar
    1/4 tsp. each: Salt and pepper
    Make It

    PLACE potatoes in large bowl; set aside.

    COOK and stir bacon in skillet on medium heat to desired crispness. Remove bacon from skillet; drain, reserving 2 Tbsp. drippings in skillet. Set bacon aside.

    ADD onion and celery to skillet; cook and stir until celery is crisp-tender. Blend in flour. Stir in water, vinegar, sugar, salt, pepper and bacon. Bring to boil. Cook on medium heat 5 minutes or until thickened, stirring occasionally. Pour over potatoes; mix lightly. Serve warm.
