I don't use beef but you can easily change my recipe to beef.
I use 3 chicken breast that have been baoiled until they can easily be shredded. Then I saute onion, garlic, red pepper and jarred jolopenos that have been diced. I add them to the chicken. For the sauce I use 2 8oz cans of tomatoe sauce. A spoonful of adoboe sauce, a tsp of cumin, and a tsp of chili powder mix all together then warm. I dip the corn tortillas into some of the sauce. the rest goes into the chicken mix. I spoon the chicken into the tortilla and line them in the pan. Bake at 350 until warmed through.
You can add montery jack cheese on top if you want.
