Dry Beans

Whats good with white beans? I was hoping that some of you moms have made some yummy recipes that I could borrow!

  • I cook mine with a nice sized ham hock. Then, I make corn bread & fried potatoes to go with them. I like to serve them with fresh green onions. But, since my colon surgery, onions seem to bother me. I miss them, too!

  • In a pot of water, add the dried beans, chopped ham or ham hock, chopped onion, chopped cilantro or parsley, bring to a boil, reduce heat and then simmer for about 2 hours or until beans are very tender. Make sure not to salt the cooking water until 30 minutes before done. It's great served over rice. (I add chopped serrano peppers to mine as well). Buttered cornbread is a great accompaniment.

  • I cook them and then dump them in a pot w/chicken broth, garlic, carrots and Italian stewed tomatoes. Makes a yummy soup
