Anyone have some good recipes?

I am looking for some good recipes that are vegetarian or meatless. I want to start eating meatless a couple times a week, but I obviously want to include protein and good stuff, and I don't have any recipes, so I'd appreciate any that you are willing to share!

    3 eggplant, peeled and thinly sliced
    2 eggs, beaten
    4 cups Italian seasoned bread crumbs
    6 cups spaghetti sauce, divided
    1 (16 ounce) package mozzarella cheese, shredded and divided
    1/2 cup grated Parmesan cheese, divided
    1/1.Preheat oven to 350 degrees F (175 degrees C).
    2.Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
    3.In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
    4.Bake in preheated oven for 35 minutes, or until golden brown.

  • I like to make vegetarian chili. Just use your favorite recipe substituting any beans you like (red, black, pinto even canned Mexican beans) for the meat.

  • 1 1/2 tablespoons olive oil
    1 large onion, cut into small dice
    3 medium carrots, peeled and sliced 1/4-inch thick
    3 medium celery stalks, sliced 1/4-inch thick
    1 medium bell pepper (red or yello, stemmed, seeded and cut into medium dice
    1 pound all-purpose potatoes, unpeeled and cut into medium dice
    1 (16 ounce) can petite diced tomatoes
    2 (15.5 ounce) cans cannellini or other white beans, undrained
    6 cups low-sodium veggie broth in can or carton
    7 ounces loosely packed baby spinach
    1 cup frozen green peas
    Salt and ground black pepper
    Prepared pesto
    Heat oil in a soup kettle over medium-high flame. Add onions, and saute until tender, about 5 minutes. Add carrots, celery, peppers, potatoes, tomatoes, bean and chicken broth; bring to a boil. Reduce heat to low and simmer until vegetables are just tender, about 15 minutes. Add spinach and peas; continue to simmer until spinach wilts, 3 to 4 minutes longer. Seas

  • Any breakfast meal, just leave out the meat - quiches, hotdishes, pancakes, waffles, etc, with fruit on the side.
