  • This was a smash on Thanksgiving.

    Pumpkin Bars

1 16oz package pound cake mix
    3 eggs
    2 tablespoons butter melted
    4 teaspoons pumpkin pie spice
1 8oz package cream cheese softened
1 14oz can sweetened condensed milk
    1 15oz can pumpkin puree
    1/2 tsp salt

Preheat oven to 350 degrees F (175 degrees C). Coat a 9X13 pan with nonstick spray.
In a large bowl on low speed combine cake mix, 1 egg, margarine, and 2 tsp pumpkin pie spice until crumbly. Press onto bottom of prepared pan.
In another bowl beat cream cheese until fluffy. Gradually beat in sweet condensed milk, then other two eggs, pumpkin, other 2 tsp pumpkin pie spice, and salt; mix well. Pour over crust
Bake 30-35 minutes or until set
Cool then chill in refrigerator. Cut into squares. Store covered in refrigerator.

  • 1 lb sweet potatoes
    1/2 cup butter, softened
    1 cup white sugar
    1/2 cup milk
    2 eggs
    1/2 tsp ground nutmeg
    1/2 tsp ground cinnamon
    1/2 tsp allspice
    1 tsp vanilla extract
1 (9 inch) unbaked pie crust

    1. Boil sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.
    2. Break apart sweet potatoes in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
    3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
