How do I get my biscuits to be softer and more fluffy?

I'm not sure what I'm doing wrong because they come out beautiful but the top and bottom are hard. The middle is fine but what can I do to get them to be softer on the tops and bottoms?

  • Do not use a nonstick pan. This over browns them.

    Make sure not to over work the dough.

    Place them side by side, nearly touching. This helps them rise.

    Bake at a HIGH temp for s short period, rather than the other way around.

    Make sure they are on the middle rack, and that there are no other pans above or below.

    Butter the tops immediately after removing from the oven.

    Remover from the pan immediately.
