What are some good low carb recipes?

I am a diabetic and need to have a certain amount of carbs with my meals. Any low carb suggestions, as I am running out of ideas. Thanks!

  • vegetable lasagne 3 tbl spoons cornstarch 2 1/2 cups milk 2 small zucchini chopped 1 cup chopped red bell pepper 1/2 cup diced onion 1/2 cup parmesan cheese 1/2 tsp salt and pepper 5 no boil lasagne noodles 15 oz riccota cheese. Assemble like lasagne makes four servings and is 34 carbs per serving

  • Any stir-fry with limited rice.

    Taco salad.

    Bacon and eggs--no toast.

  • If you didn't know already rice cakes make an awesome stand in for bread and come in lots of flavors for snacks

  • Substitute spaghetti squash for pasta. It still has carbs in it- but a whole lot less.

  • Haha! I know those re bad. Been diabetic for a few years. That's why i need ideas for recipes, so I can have something to choose from. I can et bread, pasta and potatoes, ifI do o in moderation. Thanks for the answer! ;)

  • Low carb is one of the worst diets for you. It can cause ketosis. If you still wanna do it, go ahead, but just an fyi.

  • I am not just doing low carb diet. I am a pregnant diabetic, and am only allowed a certain amount of carbs per meal. I am just asking for ideas. My doctor is keeping a close eye on my levels, and I'm sure if anything was off, would have me change things. However, I have dropped my A1Cs to a 5.2, which is really great!
