I was just informed by a nutritionist that peas are a starch.

So peas and potatoes are starches, corn is grain, squash and tomatoes are really fruit... that does that leave for veggies? carrots? leafy ones? Do any beans count or are the starch and protein?

  • Beans are a protein. Basically, your veggies are leaf greens, carrots, sweet potatoes, maybe eggplant, broccoli, cauliflower, parsnips, radishes, asparagus, artichokes. I don't think peppers are veggies, but I'm not sure.
