Dinner Ideas =) C'mon share!

Everyone is always looking for new yummy dinner ideas so I thought I'd share one of ours then you ladies can share back something your family loves.

Enchiladas: Yield aprox 10
1 can refried beans
1 can black/red/any beans
1 - 2cups shred cheese
Salsa/taco sauce/chopped tomatos

Simply spread the refried beans onto a tortilla, spoon in some beans, salsa/sauce/toms, sprinkle some cheese then roll it up. Place rolls into a casserole dish. Make as many as you need for your family. Top off the rolls with more cheese & bake in oven at 350 until heated through.

Now you can do this meal with a number of foods. For us we only use half a can of beans for a family of three (2adult + 1 toddler). For the leftover beans I put them into tupperware & freeze them then next time pull them out & defrost in microwave for another meal =) with that beaing said you can open up a can of red beans & black beans & mix them up then save the rest for later. Also you can make these in the morning set in the fridge & toss into oven when you get home if its a long/late day.

  • White chicken chili- de-bone a pre-cooked rotisserie chicken, 1 box chicken broth, 2 cans white beans mashed, 2 cans white beans whole, season to taste (I use salt, pepper, cilantro, lime juice, green peppers) jut pop it all in the crock pot................I serve with crackers or grilled cheese. You can also take the left overs, add a can of corn, can of black beans, packet of taco seasoning and serve with shredded cheese, sour cream, and the small tortilla strips (pre-cut for salad use) for taco soup..

  • cheeseburg joes..

    lb ground beef.. cook to brown, drain, add 1/2 cup ketchup and 1/2 cup bbq sauce (more or less to taste), let sit on low for 5 minutes.. scoop some onto a hamburger bun and put on a piece of cheese.. and serve.

  • two other quick ideas:
    marinades that are quick and easy and tasty..

    chicken breast: italian dressing (allow to marinade in fridge for at least an hour, but no longer than 24 hours to allow for best taste), cook and serve

    Steak: sesame ginger marinade.. apply like a bbq sauce, cook steak to your liking and serve... very good.
