  • I dust them with salt, pepper and garlic salt and grill them on a lightly piled (spray with olive oil) grill. Or I just use Mrs. Dash table blend and a bit of salt before grilling. Start grilling when they are still slightly frozen in middle; edges will sear to seal in juices. Don't forget to take off the grill before fully done; meat continues to cook as it rests. Put it them on a plate and cover with another plate or foil until ready to serve.

  • Slice through center to butterfly, marinate in light Italian dressing, top with chopped green bell pepper and onion, fold back in half, pin closed with toothpick. Bake, serve with rice and a cooked vegetable like corn on the cob.

  • 4 boneless pork chops, 3/4-inch thick
    1 teaspoon vegetable oil
    2 tablespoons apple jelly
1/4 teaspoon fresh coarse ground black pepper
    1/4 cup apple juice
    2 tablespoons dijon-style mustard
1 Season chops with pepper. Heat oil in large nonstick skillet over medium-high heat; brown chops on one side.
2 Turn chops; add apple juice, jelly, and mustard to skillet. Reduce heat to low, cover, and cook 8 to 10 minutes.
