Cultural food ideas for tomorrow!!!

My niece calls. Apparently she forgot she is supposed to bring in an ethnic food for a cultural food fair they are having at school tomorrow. Her mom is at her husbands softball game and told her daughter to call me for help. I have no idea of a quick thing I could help her make for this for tomorrow. Any ideas?

  • Rice and Beans...go to the store and buy a can of Goya beans (kidney or black). The recipe is on the back of the can. You will also need Sazon seasoning.

  • Ingredients
    1/4 cup store-bought vinaigrette
    1/4 cup (about 3) thinly sliced scallions (green onions)
    2 tablespoons chopped cilantro or parsley
    1 teaspoon grated lime peel
    1/4 teaspoon salt
    1 (15-ounce) can black beans, drained and rinsed
    1 cup frozen corn, thawed
    1/4 cup diced red bell pepper
    1 fully ripened avocado, halved, pitted, peeled and diced
    1.In a large bowl, whisk together salad dressing, scallions, cilantro, lime peel, and salt.

    2.Add beans, corn and pepper; toss to coat. Add avocados; toss gently.

    Makes 4 cups.

  • italian Tuna dip,
    1 c. sour cream
    1 (3 1/4 oz.) can tuna, drained & flaked
    1/4 c. grated Parmesan cheese
    1 hard boiled egg, chipped
    1 tbsp. lemon juice
    2 tsp. dry Italian salad dressing mix

    Mix all above ingredients and chill. Sprinkle with paprika to garnish and serve with cut vegetables or crackers. Makes 1 1/2 cups of dip.

  • italian vegi dip
    1 c. Kraft real mayonnaise
    1 c. sour cream
    1 pkg. (0.6 oz.) Good Seasons Zesty Italian salad dressing mix
    1/4 c. finely chopped red pepper
    1/4 c. finely chopped green pepper

    Mix mayonnaise, sour cream and Zesty Italian salad dressing mix until well blended. Stir in peppers. Refrigerate. Serve with bread sticks, vegetable dippers or chips. Makes 2 1/4 cups

  • spanish dip
    1 can refried beans with green chilies
    4 mashed very ripe avocados
    1 pt. sour cream
    1 lg. green pepper, chopped
    1 lg. onion, chopped
    1 or 2 lg. tomatoes
    1 jar jalapeno taco salsa
    Lots of shredded Monterey Jack & shredded cheddar cheese
    1 pkg. dry taco sauce mix
    Chopped black olives in half

    Layer in 9"x13" pan, starting with refried beans, then mashed avocados, spread sour cream, then 1 layer of green chopped pepper, then layer of chopped onion, then chopped tomato, then jar of taco salsa, add plenty of cheeses on top, then add dry taco sauce mix. Sprinkle on cheeses. Add black olive halves to decorate top of dish. Serve with Tortilla chips (heated if preferred). Do not heat dip.

    I have the rice and beans stuff. I hadn't even thought of that!
