  • Herbed Pizza Sauce

    3/4 cup chopped onion
    2 cloves garlic -- minced
1 tablespoon olive oil, margarine, or butter
    1 can tomatoes (14 1/2 oz) -- cut up
    1 can tomato sauce (8-ounce)
    1 bay leaf
    1 tablespoon snipped fresh basil
--or 1 teaspoon dried basil crushed
    1 tablespoon snipped fresh oregano
--or 1 teaspoon dried oregano, crushed
1 teaspoon fennel seed -- crushed (optional)
    1/2 teaspoon sugar
    1/4 teaspoon pepper

    1. Cook onion and garlic in oil. Stir in remaining ingredients. Bring to boiling. Reduce heat; simmer, uncovered, for 35 to 40 minutes or to desired consistency, stirring occasionally. Discard bay leaf. Makes 1-3/4 cups (enough for 2 pizzas or 6 servings).

Hot and Spicy Pizza Sauce: Prepare as above except reduce the chopped onion to 1/2 cup and add 1/2 cup chopped green pepper with onion. Om
