Eating Avocados

I have heard many benefits of avocados and that they are a superfood. My son does not like them. Is there any kind of recipe I can make for him to eat avocados?

  • Google avocado pudding and you will find lots of recipes. You can also just accept the fact that he doesn't like them and move onto another food. Take him to the farmer's market or produce stand, have him pick out another veggie that looks good to him. The best superfood is the one you can actually get into your kid!

  • I throw one in a smoothie for my kids - makes it creamy without adding any taste, they had no clue it was in til one caught me adding it - and they still sucked down the smoothies knowing it was in there. My smoothies are a varied mix of strawberries, blueberries, mango, kiwi, carrot, spinach, banana, peach, whatever we have, plus the avocado.

    Key Lime pie pudding.
    1 Haas Avocado
    1 Ripe banana
    Juice of half a lemon and half a lime
    Place in food processor until creamy. (By leaving out the lemon and lime
    juice, this recipe would make an excellent baby food.)

  • Avocado Salad
    4 tablespoons honey
    1 tablespoon(s) lemon juice
    1 tablespoon(s) finely chopped cilantro leaves
    salt and freshly ground pepper to taste
    2 big ripe avocado(s) peeled and sliced
    1 big red bell pepper(s)
    1 big cucumber(s)
    2 big tomato(es)
    1 cup(s) corn kernels cooked
    In a bowl mix the honey, lemon juice, cilantro leaves, salt and pepper to make the dressing for the salad.
    Cut the red bell pepper(s), cucumber(s) and tomato(es) into long thin strips. In a big salad bowl, toss the vegetables, avocado slices, corn and the dressing with a light hand. Refrigerate.
    TIPS: It is important that the avocados be very ripe and soft. Always refrigerate a salad to chill well before serving. Serve cold
