  • pickles, cucumber water is very refreshing on hot days, just add slices to cold water and drink.

  • You can cut them into slices, then add some tomatoes and Italian dressing. Maybe slice half an onion in there, too.

  • You can not freeze cucumbers... you can put them in dill vinegar and pepper for a snack...
You can also serve them daily for evening snack, salad, or salted... believe me cucumbers
here don't last but a few days... we are big veggie eaters... also slice and dip...

  • Don't freeze them, they have too much water in them and they will turn to mush when you thaw them (yuck). I don't like raw onions so I seed them, chop them and mix them with some seeded and chopped tomatoes and use to top chicken tacos (our version of fish tacos since I don't like fish either) or mix into some sour cream for a yummy dip.

  • My favorite thing to do with cucumbers: Slice them really thin(about 3 medium sized ones), slice a small onion thinly, and toss them together. Make a dressing out of 1/2 c. sour cream, 2 T. sugar, 3 T. cider vinegar, 1/4 tsp each dry mustard & pepper; 3/4 tsp. salt and 1 T. minced parsley(I usually omit this). Stir together until smooth, pour over cukes and serve immediately. Yummo!!!

  • Salad. Even tossing them in oil and vinegar with some tomatoes is VERY good! Cucumber/avocado soup is delicious! (You can use cilantro instead of mint if you like!)
