would adding some chopped potato to my veggie soup turn the soup all starchy?

  • nope, just add them the last 1/2 hour of cooking. You don't want them to be over mushy. If they cook too long, they'll break apart. They also don't freeze too well. My MIL boils the potatoes separately & adds them to each plate. This way, she can freeze the rest of the soup without the potatoes getting weird & mushy because they were frozen in the soup.

  • No, but use red or Yukon gold potatoes; baking potatoes turn to mush very easily.
