Lunch with friend ... need meal help please!

Having a good friend over tomorrow for lunch with our 3 kids ... I am going to make a cheese tortellini pasta salad with tomatoes, cukes, red onion, and cheese in it with an italian dressing (wondering if hard salami or something along those lines would be good in it...?). I thought of having that and watermelon or whatever fruit we have on hand tomorrow (grocery shopping tonight). Is that enough or would you have some kind of a sandwich along with it? Ideas? Thanks!!

  • Sounds perfect...what time should I be there? LOL
    Add a little perfect summery drink..maybe some fresh lemonaide with lemon slices? Or Sweet Tea ( or aglass of wine hehe )

  • I always add different salmis and salumi to mine, coppa salami is also good or even some pancetta as well. we like one that has peppercorns in it, there is also a dry aged one with truffles we get too. They are local brands or I would give you the name, but I have only seen them sold here in Wa. Sounds like a good lunch, what time shall I be over?
