  • The cool thing about salads is that you can use whatever you want. When making a "green" salad..try changing the greens. Baby greens, micro-greens, various lettuces, spinach, frisee, endive, radicchio, etc. Change the 'theme' of the salad to suit what you're serving too: Lasagna- romaine leaves w/ green and black olives, prosciutto, asiago cheese, roma tomatoes & tiny balls of mozzarella. Gyros- romaine & spinach, feta, tomato, cucumber, dill, kalamata olives, & thinly sliced red onion.
You can add fruits (think mandarin oranges, sliced strawberries, dried cranberries, dates) or nuts (chopped walnuts or pecans, sliced almonds), various flavored croutons, hundreds of different cheeses, any combination of vegetables (cauliflower, broccoli, shredded carrots, red cabbage etc), and meat too (cappacola, prosciutto, genoa, chicken, ham, serrano ham, etc). And to top it off, make your own dressing.
