Vegetarian picnic?

My husband invited his coworker and family to come eat supper with us at our pool next week. I was planning on either roast beef sandwiches or burgers on the grill, but I found out she's vegetarian! I had planned a fresh veggie tray with dip, watermelon and homemade ice cream for dessert (her husband says she eats ice cream so she must be ovo lacto?). I know very little about vegetarian dishes, so I was wondering if anyone had any ideas for a main dish for a picnic - I do have access to a grill and a microwave at the pool, or a main dish I could make vegetarian for her?

  • why don't you make a few veggie sandwiches or buy some vegetarian hot dogs or veggie burgers. Simple. I'm sure there will be a few vegetarian side dishes she can choose from.

    My DD is vegetarian & when we go to cook outs, we bring veggie dog for her to throw on the grill. There is usually plenty of other vegetarian things around for her to eat. Potato salad, regular salad, pasta salad, fruits & veggies

  • You could slice a portobello mushroom and grill it for her to make a burger with.

  • The same brand also has hot dogs, the rest can be maybe a cold potato salad, or spinach salad with fruits and a mild dressing.

  • Yes . . . if you are doing grill, just pick up some frozen veggie patties for veggie burgers. Older is right . . morningstar rocks!

    Potato salad would also work, as would hummous and pita chips . . .
