When someone is on trial for a crime, while they're at the court house for their trial, are they detained during recesses?

i've been following the casey anthony trail and am just curious if she just gets to hang out during lunch like no big deal~

or do they like lock them up in a cell or something

sorry if that sounds stupid, i have no idea how court proceeding work!
