1 Bump

What can I make for dinner.... no meat, limited time

I have an hour and a half. red beans, lentils, rice, barley, garlic, onion, a little pasta, a variety of frozen veggies(red/green peppers, spinach, asparagus, broccoli, green beans, mixed veggies), 1/2 can of corn that needs eaten... black olives, almost any seasoning. hmmm.... basics like flour and sugar... no honey or brown sugar. I do have ketchup! Lettuce and 1/2 a tomato. Let's see oh eggs and mozzarella cheese, no parm... Any fabulous ideas?

  • Some type of "taco salad" if you have lettuce. Some type of veggie stir fry or veggie fried rice. Spaghetti with garlic bread or some type of olive and corn spread. Faux veggie pizza on biscuits or some type of scratch pastry.

  • I also love a chilled pasta salad with loads of veggies lightly grilled with cubes of cheese and black olives. Drizzle with italian or a vinagrette dressing and toss together with spice to taste like pepper and garlic salt. And there is always red beans and rice with a side of cornbread! :)

  • Well, after some real searching I came up with a lentil/veggie/tomato saucy pie thingy. I kind of made it up based on a few recipes... We shall see. I thought of stir fry also but I have no soy sauce left...
