Salad recipes needed. It's too dang hot to cook.

Any good salad recipes you would care to share with me? Thanks!

  • Broccoli Salad

    1 Bunch broccoli chopped
    1 Medium onion or 4 green onions chopped fine
    12 strips of bacon cut fine and fried crisp
    ½ C Raisins (soak in hot water while frying bacon)
    1C Mayonnaise
    2T Vinegar
    ½ C Sugar

    Cut the flowerettes (?) off the stems of the broccoli in bite sized pieces. In a LARGE bowl mix everything but the mayo, vinegar and sugar (dressing). In a separate container/bowl mix the dressing, then pour over the rest. Mix thoroughly and enjoy!

  • I like to toss baby spinach with sliced strawberries, mediteranean flavored feta cheese, with a rasberry vinaigrette! you can add grilled chicken, or smoked salmon or even thinly sliced steak to it! i love it

  • I make a huge bowl of romaine with grilled chicken, red bell pepper, carrots, tomatoes, red onion, cheddar cheese, large croutons, cucumbers, real bacon chopped small, and then let everyone choose the dressing they want on it. I also heat a large loaf of crusty bread to go with it... Takes about 7 minutes at 400 degrees...

  • tri colored pasta, Italian dressing, cucumbers, bell peppers, black olives, zucchini, red peppers, etc... throw in whatever you like. Refridgerate, eat!
