What can I do with all these red potatoes?

I have a 5lb bag of red potatoes and I need to use them up by Friday. (we are going away for a month and the potatoes will go bad). I want something that I can freeze or eat or even take with me on vacation (although that will be a challenge). We have a very small family so making that much mashed potatoes will not get eaten before Friday. Any suggestions?

  • Make Hash Browns,some mashed potato's, and make Shepard's pie, and then the potato salad, also you can make... cream potato soup too. Make home-made scallop potato's, in a small square size dish, cut up potato's into circles lay them down, put cream on them, butter and cheddar cheese with salt and pepper bake for 350 degrees for 20-35 mins check on them until soft, boiled, and light brown color. Very good and crispy our families love it!

  • Potato salad? You can also freeze mashed potatoes or blanch them & freeze them. Au gratin side dish?

  • Make potato salad. You could use a pound or two of them and make homefries for a nice, pre-vacation breakfast.

  • Love red potatos. Cut into quarters, boil them, drain the water, then melt some butter with fresh garlic and green onions. Salt n pepper. Yum.

    Or make potato salad. Use fat free plain yogurt, mustard, salt pepper, slice red onion, dice celery, dice red pepper. Very yummy and low fat.

    You can also slice into wedges, toss with olive oil, salt pepper, fresh garlic and bake on a cookie sheet in the oven.

    I used to love to take the baked red potato and slice and sautee it until brown and crispy with onion, fresh basil or rosemary. salt n pepper.

  • Roasted Red Potato Salad
    Cut potatoes into bite sized chunks and spread on baking pan. Drizzle with olive oil and roast until tender. Fry some bacon until crisp, drain and crumble it up. Make a potato salad dressing (to your taste) with mayo, sour cream, salt and pepper. Chop some green onions or chives to add to the mix and add some shredded cheese.

  • Yep !... Wash them, cut them in chunks and boil them. When their done cool them, cover them with Italian dressing and a few dashes of basil and dill !... Voila ! A different sort of potato salad !

  • I like them cooked but not too soft,(you can nuke them) add several slices of crispy bacon, (crumbled) chopped onion (not too much) handful of blanched green beans, add a vinagrette dressing with a splash of tarragon. Toss it, leave it overnight-it's better the next day! Enjoy!
