Green Chile enchiladas.
I can hatch green enchilada sauce
1 can hatch green chiles
1 8 0z philly cream cheese @ room temp
shredded cheese of your choice ( I like sharp cheddar)
Cut chicken into bite sized pieces and cook in a T of oil.. Melt cream cheese, chicken, and chopped chiles on low heat while stirring. Place a few T's of mix into a tortilla and roll em up tight. Place in 9 by 13 pan. Pour enchilada sauce on top and sprinkle with lots of cheese. bake at 350 until cheese is melted and food is heated through
