I make a mexican casserole that is simple and yummy...it's just a can of black beans, a can of pinto beans, a cup of frozen corn, and a jar of salsa. Bake in the oven (or microwave) until bubbly hot. It also makes a great dip with tortilla chips.
I make burritos with beans, rice, cilantro, salsa, and avacodo. (sometimes I replace the rice with potatoes)
Grilled Veggie Fajitas (sometimes I add black beans)
Veggie Stir Fry with peanuts
Taco salad with pinto beans, black beans or kidney beans
I make a spaghetti salad with a red wine vinaigrette, tomatoes, cucumbers, avocado, and I like feta cheese on it
Baked potatoes topped with the mexican casserole or chili
