I am looking for a recipe for a cool, healthy Summer dessert.

  • Punch bowl cake........choose any cake (sugar free pound cake works great), mixed berries (I prefer a combo of strawberries, blueberries & black berries), 2 tubs of cool whip (can use fat free or sugar free), 1 box instant pudding (recommend french vanilla or cheesecake flavor), any chopped nuts, shredded coconut
    In a glass bowl alternate layers of cake (crumbled), fruit (can soak in a little white wine for an all adult party), and cool whip mixture (mix 1.5 tubs cool whip with powdered pudding, ..save the other half ), and coconut.......... top with nuts and remaining cool whip
    Tastes great, and looks really pretty too.
    It's not the healthiest.........but certainly not the worst as far as desserts go. To up the healthy factor use minimal cake/cool whip and up the berry content!

  • My stepmom makes these little strawberry shortcakes... they get mini shortcakes from the grocery store (they come in packs of 6, and they're a serving each, so a pack will feed 6 people), she puts whipped cream on top, and then chopped up strawberries on top of that. You could put ice cream and other kinds of fruit on top instead, which might be a little healthier. They're so good, and not a heavy dessert at all - perfect for summer.
