Lemon Juice Substitution

I came across a recipe that wants 1/2 tsp of lemon juice but all I have is lemon extract. Would it be ok to substitute? Same quantity or lower in case of the extract being stronger.

  • I'd add white or cider vinegar instead, maybe with a drop of lemon extract to make the flavor more lemony. I'd assume that acid is called for in the recipe.

  • I think you could try 1/4 of teaspoon in it,, but I am pretty sure it has sugar,, so taste it before you put it in.

  • If the recipe calls for 1/2 tsp- use 1/4 then taste it.
