  • i make my own version of chicken cacciatore in my crockpot i just defrost the chicken then set in in there by like 6or 7 am than add cans of diced or chunked tomatoes with the juice and then ad a little bit of vinegar and sugar and then garlic and italian seasoning i dont have to do anything with it til i am ready for dinner then i make the spaghetti noodles. the sauce is not supposed to be thick like spaghetti sauce so don't worry about it being thin. my kids gobble it up.

  • I'm making Chicken Salad tonight. Bake boneless skinless chicken for about an hour at 350 until done (white or dark meat doesn't matter). Cool, then cut up into bite-size chunks.
    Add chopped celery, grapes, chopped nuts. Then serve with a jar of mayonnaise. Some people stir in the mayo before serving, but not everyone in my family likes mayo. Some prefer their chicken salad "dry". I use any kind of grape, but seedless is nice. And if the grapes are large, I cut them in half. I use chopped almonds, but you can chop any nut. I serve with raw vegetables (cucumbers, tomatoes) and a glass of wine.

  • This is a really good casserole. Only takes a few minutes to prep and 45 mins to cook.

    2 cups cooked rice
    2 cups shredded cheese(I put one cheddar and one Monterey Jack)
    1and1/2 cups cooked chicken breast chopped
    1 can carnation cream(12oz)
    1/2 cup chopped red onion
    2 large eggs slightly beaten
    1/4 cup finely chopped fresh cilantro (optional)
    2 tablespoons butter or margarine melted
    1 tablespoon diced jalapenos (optional, but I love them in it)
    Preheat oven to 350 degrees. Grease a 2 quart casserole dish.
    Combine ingredients well in dish
    Bake 45 to 50 minutes or until knife inserted in center comes out clean.
