Well I have a few favorites. But tonight I fixed Garlic & herb pork tenderloin with roasted potatoes.
The Pork tenderloin was already spiced for me. But if you have one without spice do olive oil, garlic, your choice of herbs and let it marinate overnight. Cube red potatoes (Or normal Idaho potatoes if you don't have the red). I always put a layer of potatoes on the bottom of the pan, then the pork on top and then more potatoes on top of the pork. Roast for 350 degrees for an hour and you have a very yummy dish. :)
