how to prepare Prime Ribs for X-mas?

Not to mention what sides would you have it with?

  • We are doing ours with garlic cheddar smashed red potatoes and asparagus with roasted pine nuts.
    Rub entire roast with canola oil and season all surfaces with salt and pepper. Rub the bones with oil too and season. Rub the seasoning in well.
    Heat overn to 250 Place roast in a glass baking pan and insert a probe thermometer into the enter. Set for 118 degrees. Remove from oven and allow to rest until roast reaches 130/.
    Jack oven to 500. cover roast with heavy duty foil and return to oven until you have a good crust. Remove Roast from pan and transfer to board. see next.

  • Defat pan juices and put pan over low heat. Deglaze with one cup water. add 1 cup red wine and four sage leaves, rolled between your fingers. Cook for one minute, strain and serve on side.

  • I'm making Bobby Flay's Goat Cheese Cauliflower Gratin (on to go with our prime rib roast.. YUM! Last year, I made a rub for my prime rib with rosemary, chopped garlic, salt & pepper.. don't underseason, it's a lot of meat! Cook your meat at about 325-350, a meat thermometer works best for these (rather than just timing it).. the therometer should read 135 degrees in the middle for medium rare.. which is how we like it!
