  • You can make tangerine curd, which you can then use as a pie filling, a cake filling, or a tart filling.
    Or try this: zest the tangelos and set the zest aside. Juice them, and remove any seeds, then add sugar equal to the amount of juice. Heat over med-high heat and bring to a boil; reduce heat and simmer until reduced to a syrup consistency. Prepare a white or yellow cake in round layers. Once cooled, brush with the tangelo syrup. Take 1pint chilled whipping cream; whip to soft peaks, then use the zest and a couple tbsp of remaining syrup to flavor as you whip to stiff peaks. Use to frost and fill cake. Chill until 20 min prior to serving. Soooo yummy!
