Dinner date ideas

On the 1st I have a guy I'm seeing, my friend and her boyfriend coming over for dinner. I need some ideas!!!! Can you please help me? I am thinking about making chicken. I made this really good stuffed chicken breast with gorgonzola cheese w/lemon wine sauce one night but CAN'T find the recipe anywhere. I would like ot stay away from hamburger and red sauce since I made lasagna for him the other night. Any help would be appreciated!

    Spinach & Ricotta-Stuffed Chicken Breasts

    Spinach and Ricotta Stuffing (see recipe below)
    4 (6 to 7 ounces each) chicken breast halves, boneless and skinless*
    Kosher coarse salt and freshly ground black pepper
    2 tablespoons vegetable oil
    1/2 cup dry white wine
    1/2 cup chicken stock
    1 tablespoon Dijon-style mustard
    1 lemon, juiced (approximately 2 tablespoons)
    Kosher coarse salt and freshly ground black pepper
    Chopped parsley leaves, for garnish

    Spinach and Ricotta Stuffing:
    1 cup cooked, chopped, and thoroughly drained fresh spinach leaves
    1/2 cup ricotta cheese
    1/2 cup Gorgonzola cheese
    4 slices cooked bacon, crumbled
    Coarse salt and freshly ground black pepper
    1 large egg

  • take the chicken grill or saute it and mix it with some nice thin pasta and toss it together with a nice garlic herb butter sauce and offer yeast rolls with dinner...if you want you can even add fresh snap peas and maybe some roasted tomatoes...enjoy

  • Baked or stuffed pork chops with a rice dish? Meatloaf and mashed potatoes or pot roast with veggies (and I know that probably sounds corny lol) Grilled chicken or steak salad? Homemade beef stew with rolls or biscuits? Sorry, that's all I can think of right now!!!
