I have a dozen peeled lemons.. what do i do with them?

I made a gallon of limoncello and am now stuck with all these peeled lemons.. ideas?

  • You can juice them and freeze the juice until you decide what to make with it. You can make all kinds of things with lemon juice, so you can even freeze it in ice cube trays, so you have small amounts to use whenever you want to brighten up the flavor of a dish, like fish or a pomodoro pasta. You can make lemon meringue pie, lemon angel food cake, lemon cake, lemon tarts, lemon curd (for any of the aforementioned desserts, or for scones or muffins). You can make lemon poppy seed muffins, lemon chicken or shrimp, etc.

  • My first choice would be lemonade. But the juice would freeze well, too. As was suggested above, freezing in ice cube trays is a convenient way to do it, then you can put the cubes in freezer bags to pull out as many as you want in the future.

  • try making lemon chicken. it's great. or you could make lemon ice. kinda like shaved ice.

  • I like putting half a lemon in my garbage disposal and running it. Makes the sink and the kitchen smell good. :-)

  • OH there is nothing better to have around than fresh lemon juice! you can keep it in your fridge for weeks too, besides freezing.
    You can make a wonderful fresh vinagrette. Herbs, lemon juice salt pepper olive oil.
    Chicken Francese oh yum! You can egg batter chicken and saute it in butter or skip the batter and just season. Saute until just cooked through and remove from pan. Deglaze with one cup white wine and add lemon juice to taste, reduce by at least half. Add unsalted butter, one pat at a time, unti sauce is thickened and glossy. season with fresh parsley and salt and pepper.
