What to do with the leftover sweet potatoes?

Some how I have a gallon bag full of leftover sweet potato casserole (mashed sweet potatoes with brown sugar and honey and probably a few marshmallows I missed) and have no idea what to do with it. I'm not the biggest fan of just eating them mashed. Can you make pancakes or muffins or other things out of them?

I can look up recipes, but prefer to hear from people who've actually made the things before. Thank you!

  • Sweet potato pie! Haven't made it, but I have eaten it, and it is very tasty. I've had sweet potato muffins, too, although I never made them either. Perhaps you could freeze portions of your sweet potatoes to have at meals another time.
