Turkey leftoversAfter stuffing myself to the gills on Thanksgiving, I swore I would never eat again. But now that I've digested, I've got only one thing on the brain: turkey leftovers! I posted a yummy turkey dip recipe a few days back. And, today I'm posting the recipe for my family's turkey casserole, which my mom always made for us when we were kids...but I also want to know:

What do YOU do with Thanksgiving leftovers (besides make turkey sandwiches, of course)?


Turkey Casserole

Leftover turkey

1 pint sour cream

1 can cream of chicken soup

1 pkg. Pepperidge Farm stuffing mix

Shred turkey. Put it into casserole dish (pre-sprayed with cooking spray). Mix sour cream and soup together and spread on top of chicken. Make the stuffing according to directions and crumble it on top of cream/soup mixture. Bake at 350 degrees for 15 min. covered and 10 min. uncovered or until bubbly around the edges. This can be prepared ahead of time and refrigerated until cooking.

I do a turkey salad for sandwiches. It is kinda like chicken salad but my family loves it. I have to buy a larger turkey just to make sure there is some left to make it. My sister doesn't like turkey but I have to send her some every year. Crazy girl. She will only eat mine too. Well I better quit gloating. Thanks for the recipe. I didn't see the first one.

I'm actually making a turkey and rice soup right now.  The leftover carcass is simmering in the dutch oven as we speak, er type.

HERE ARE MY FAVORITE LEFTOVER RECIPES:

 

Turkey Potpie

1 medium onion, chopped
1/3 cup butter
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1-3/4 cups chicken broth
2/3 cup milk
2 cups cubed cooked turkey
1 cup (4 ounces) shredded cheddar cheese
1 package (10 ounces) frozen peas and carrots, thawed

Pastry:(I usually buy the pre-made crusts to save time)
2 cups all-purpose flour
2 teaspoons celery seed
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 5 tablespoons cold water
Milk, optional

In a saucepan, saute onion in butter. Stir in the flour, salt and pepper until blended. Gradually add broth an milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the turkey, cheese and vegetables; cook until the cheese is melted. Set
aside and keep warm. For the crust, combine flour, celery seed and salt in a bowl. Cut in shortening until mixture resembles coarse crumbs. Add enough water until dough forms a ball. Divide dough in half. Line a 9-in. pie plate with bottom pastry; trim even with edge of plate. Pour hot turkey filling into crust. Roll out remaining pastry to fit top of pie; place over the filling. Trim, seal and flute edges. Cut slits in pastry. Brush tops with milk if desired. Bake at 375° for 40-45 minutes or until crust is golden brown.

LEFTOVER STUFFING STUFFED MUSHROOMS

20 large white mushrooms (about 2 pounds total),
stems removed
1 cup leftover stuffing
1/2 cup finely grated parmesan cheese


 

1. Preheat the oven to 400°. On a lightly greased baking sheet, bake the mushroom caps, stem sides down, for 10 minutes.
2. Meanwhile, in a small bowl, combine the stuffing and cheese. Flip the mushroom caps over and mound the stuffing into each one. Bake until the mushrooms are tender and the stuffing is golden, about 20 minutes.

Ham and Lentil Soup

Ingredients:

  • 1 meaty ham bone
  • 6 cups water
  • 1-1/4 cups dried lentils, rinsed
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 to 3 carrots, sliced
  • 2 celery ribs, sliced
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 12 ounces bulk pork sausage, cooked and drained
  • 2 tablespoons chopped fresh parsley

Directions:

In a Dutch oven, bring ham bone and water to a boil. Reduce heat; cover and simmer for 1-1/2 hours. Remove ham bone. To broth, add lentils, tomatoes, carrots, celery, onions and seasonings; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until lentils and vegetables are tender. Meanwhile, remove ham from bone; coarsely chop. Add ham, sausage and parsley to soup; heat through. 10-12 servings (3 quarts).

HAM & MACARONI BAKE

1 (8 oz.) pkg. elbow macaroni
1 can cream of celery soup
1/4 c. milk
1 sm. onion, minced fine
1 c. diced cooked ham
1 c. (1/4 lb.) grated sharp Cheddar cheese

1. Stir macaroni into large amount boiling salted water and cook per package direction. Drain well and rinse in cold water.

2. Stir in soup, milk, onion, ham and half the cheese. Pour into buttered 6 cup baking dish. Top with remaining cheese and more ham cut into thin slices if desired.

3. Bake in moderate oven (375 degrees) for 30 minutes

I take the turkey and stuffing and stack it on thick slices of italian bread, top it with some stuffing and mashed potatoes.  Top it all with gravy and bake in a 350 degree oven for about 20 minutes.

This year we decided to make some non-traditional turkey leftover dishes.

My husband and I are making the effort to eat healthier, so we made a Turkey enchilada casserole, and boy was it delish!!!!!!

We are having tonigh some leftover Turkey manwiches and baked fries.

And I will definately have to try the stuffing stuffed mushrooms posted here.

Mix together 2 parts mashed potatoes and 1 part each of chopped turkey and stuffing...form into patties, dredge in flour, then cook them in a bit of oil in a hot pan until they're golden!  I like to serve them on top of gravy, topped with a dollop of cranberry sauce :)

Turkey nachos

2 cups chopped turkey
1 pkg taco seasoning
1 cup black beans
1/2 cup jalapeno rings
1 cup fresh cut roma tomatoes
2 cups cheese (cheddar, jack, whatever you like)
bag of tortilla chips-salsa-guac...

Simmer your turkey and taco seasoning using the instructions on the packet, same as you would ground beef. Lay down a layer of chips, sprinkle on your favorite nacho toppings, then cheese, layer on another layer of chips, toppings, cheese...

bake for 10-20 minutes at 350, voila!! We love this, we make it any time we have turkey.. we dont eat ground beef so its a nice treat every once and awhile.
