After stuffing myself to the gills on Thanksgiving, I swore I would never eat again. But now that I've digested, I've got only one thing on the brain: turkey leftovers! I posted a yummy turkey dip recipe a few days back. And, today I'm posting the recipe for my family's turkey casserole, which my mom always made for us when we were kids...but I also want to know:
What do YOU do with Thanksgiving leftovers (besides make turkey sandwiches, of course)?
Turkey Casserole
Leftover turkey
1 pint sour cream
1 can cream of chicken soup
1 pkg. Pepperidge Farm stuffing mix
Shred turkey. Put it into casserole dish (pre-sprayed with cooking spray). Mix sour cream and soup together and spread on top of chicken. Make the stuffing according to directions and crumble it on top of cream/soup mixture. Bake at 350 degrees for 15 min. covered and 10 min. uncovered or until bubbly around the edges. This can be prepared ahead of time and refrigerated until cooking.

I'm actually making a turkey and rice soup right now. The leftover carcass is simmering in the dutch oven as we speak, er type.

2. Stir in soup, milk, onion, ham and half the cheese. Pour into buttered 6 cup baking dish. Top with remaining cheese and more ham cut into thin slices if desired.
I take the turkey and stuffing and stack it on thick slices of italian bread, top it with some stuffing and mashed potatoes. Top it all with gravy and bake in a 350 degree oven for about 20 minutes.
This year we decided to make some non-traditional turkey leftover dishes.
My husband and I are making the effort to eat healthier, so we made a Turkey enchilada casserole, and boy was it delish!!!!!!
We are having tonigh some leftover Turkey manwiches and baked fries.
And I will definately have to try the stuffing stuffed mushrooms posted here.
Mix together 2 parts mashed potatoes and 1 part each of chopped turkey and stuffing...form into patties, dredge in flour, then cook them in a bit of oil in a hot pan until they're golden! I like to serve them on top of gravy, topped with a dollop of cranberry sauce :)
Turkey nachos
2 cups chopped turkey
1 pkg taco seasoning
1 cup black beans
1/2 cup jalapeno rings
1 cup fresh cut roma tomatoes
2 cups cheese (cheddar, jack, whatever you like)
bag of tortilla chips-salsa-guac...
Simmer your turkey and taco seasoning using the instructions on the packet, same as you would ground beef. Lay down a layer of chips, sprinkle on your favorite nacho toppings, then cheese, layer on another layer of chips, toppings, cheese...
bake for 10-20 minutes at 350, voila!! We love this, we make it any time we have turkey.. we dont eat ground beef so its a nice treat every once and awhile.

I do a turkey salad for sandwiches. It is kinda like chicken salad but my family loves it. I have to buy a larger turkey just to make sure there is some left to make it. My sister doesn't like turkey but I have to send her some every year. Crazy girl. She will only eat mine too. Well I better quit gloating. Thanks for the recipe. I didn't see the first one.
