Do you have a ton of hard-boiled eggs leftover from Easter? Here are some ideas of what you can do with them...
I like to make Deviled Eggs. My favorite recipe for them is as follows:
Stuffed Eggs adapted from The Art of Simple Food by Alice Waters
6 hard-boiled eggs
Salt
Pepper
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
Splash of Tabasco
Paprika
Fresh chives and tarragon, chopped
Peel eggs. Cut in half lengthwise, and scoop the yolks into a mixing bowl. Mash yolks with mayonnaise, mustard, Tabasco, salt, and pepper. If yolk mixture is too thick, add cold water by the teaspoonful until the consistency is right. Fill whites with yolk mixture. Garnish with sprinkled paprika, chives, and tarragon before serving.

Good idea...now what are we to do with those awful plastic eggs?!?! Any idea's? They're all over my house!
I make egg salad and add a few chopped or sliced eggs to other salads, too. I also make deviled eggs or just peel and eat.
I believe they are good for up to a week in the fridge.. I seldom boil more than a dozen anyway... so they disappear pretty quickly around here. We have tons of plastic eggs - can't eat those, so that's a problem!
Wow left over eggs? Not at my house. We just color eggs for the experience. We hide candy filled plastic eggs.
We colored 18 hard boiled eggs on Friday and they were all gone by Saturday afternoon. We did have egg salad sandwiches for lunch on Saturday but they wouldn't have lasted until Sunday between my husband and kids.
Like Aemelia, we color them just for the experience. We had deviled eggs out of most of them, & my hubby pickled a dozen of them. So they're already gone! :)
My kids always make s'mores with the left over PEEPS in the Microwave! We always end up with an obscene amount of them! (thanks aunts & uncles & grandparents) I have also used them to make rice krispy treats! ( I know these werent eggs but if ya got left over peeps.......)
