Is it just me, or is cutting a fresh, ripe mango messy business?
My knife gets stuck in the pit, there's juice EVERYwhere, and the slippery fruit slides all over the counter. Ugh. I often wondered if mangoes were worth all the hassle until I found this DIY video, which demonstrates an easy way to cut a mango. It definitely comes in handy when you're craving a delicious Mango-Coconut Smoothie (keep reading for the recipe).
Mango-Coconut Smoothie Recipe
1 mango, diced
1 tablespoon canned cream of coconut (if you can't find cream of coconut, use 1/4 cup coconut milk and omit regular milk below)
1/8 cup of milk
1 tablespoon plain yogurt
Ice (as much as is needed to thicken)
Honey (to taste)
Blend all ingredients except honey. Taste. If it's not sweet enough, add 1 teaspoon of honey (or more if you prefer). Enjoy!

this is great! i always make a huge ugly mess too- and never get enough of the mango to make anything!
