Happy First Day of Fall! I'm celebrating the start of my very favorite season with one of my favorite fall recipes: Baked Acorn Squash with brown sugar and butter. You'll be surprised at just how easy it is to make.
Baked Acorn Squash
(serves 4)
2 acorn squash
1 tablespoon butter
2 tablespoons brown sugar
Salt
Cut squash in half lengthwise. Scoop out seeds and strings. Sprinkle salt in each half. Place halves in a baking dish, cut side up. Fill dish with 1/4-inch of water to keep squash from sticking to bottom.
Melt butter. Stir in brown sugar until it dissolves. Fill each squash cavity with butter-sugar mixture. Drizzle any remaining butter-sugar on halves. Bake in oven on 400 for about 60 minutes until squash is soft.

This is one of my favorite recipes. It isn't even necessary to melt the butter and stir in the sugar.... I just drop a tsp of butter and sugar ineach one and pop in the oven. In a pinch I have used syup in place of the sugar too. YUMMY!!
this is one of my favorite things in the world to eat..i salt and pepper the squash as well and use a dash of cinnamon and nutmeg
I made these early in the summer when it was still cool. As soon as it cools off again, I'll start making them. Drool.
I grew acorn squashes last year and made these, they were so yummy.
Maybe I'll have to pick up one at the farmers market tomorrow.
